
Oooooooweeeeee! THIS IS SO GOOD! I've played around with this recipe a few times and have found the pre-baking/broiling method works the best. However! I feel like a toaster oven would be BRILLIANT for this recipe so if you have one, please use it and let me know how it turns out!
Ingredients
1 medium Sweet Potato
1-2 TB Almond Butter, creamy
1 medium Banana
1/2 - 1 tsp Cinnamon
Berries
Walnuts
Preparation
Rinse sweet potato and pierce with a fork or knife.
Cook in the microwave for approximately 2-3 minutes until soft.
Slice lengthwise into 1/4-inch slices.
Lay sweet potato slices on a cookie sheet and broil on high until crisp. Check every 3-4 minutes because things broil and burn fast!
Remove sweet potato 'toast' when the desired toastyness and crispiness is reached.
Top with almond butter, banana slices and/or other favorite toppings. I love adding cinnamon, blueberries and walnut pieces.
