Protein Balls

These protein balls barely last two days in our house. Not only do I love them but my boys do as well. Anytime I can sneak in some extra protein for my kids - that's a huge mom win in my book! They're great for a quick snack, after a workout or add to lunches.

Ingredients

1 cup Kodiak Oats

1/4 cup Dark Chocolate Chips

1/3 cup Vanilla Protein Powder (I like Vital Performance)

1/2 cup Almond Butter

3 TB Honey

3 tsp Water Yields: Approximately 10 protein balls (1-1/2 in.); when made at 2-3 in. size, fewer protein balls.

Preparation

  1. Pour the oats into a medium size mixing bowl.

  2. Add vanilla protein powder and mix.

  3. Add the almond butter and water, mix together. You may need to add a little bit more water to reach desired stickiness however, make sure not to overly saturate. You don't want them too wet, just sticky enough to form balls.

  4. Add the honey and dark chocolate chips mixing together.

  5. Form into small 2-3 inch sized ball, after all ingredients are mixed together.

  6. Place on a cookie sheet lined with parchment paper and freeze.

  7. Take on the go for a quick protein snack or add to any meal for a little bit of extra protein.

1-1/2 in. size and 10 protein ball yield. Nutrition facts will vary based on number of protein balls and size created.
